Puddings of all kinds, both savoury and sweet, have been great favourites with Canadians for centuries, and from Tried and True Recipes, published by St. Andrew’s United Church in Kingston circa 1900, comes an easy recipe and a suggested variation:

Blueberry Pudding

3/4 cup sugar

1/4 cup butter

2 cups flour

3 teaspoons baking powder

1/2 teaspoon salt

3/4 cup milk

1 egg

2 cups blueberries (lightly dusted with flour)

Mix all the ingredients in a bowl, adding floured blueberries last. Bake at 350ºF or steam in a chimney mould. Serve with sauce or whipped cream.

Another way would be, one cup of milk, half teaspoon of soda dissolved in it, one cup molasses, one pint of blueberries, flour enough to make a pretty thick batter. Steam two hours.
